After the Parkhurst dining lecture, I had a better view of what the dining hall has to go through in order to get us (the wonderful students of UNE) the food that we ask for. I know a lot of people complain that the dining hall people don’t pay much attention to the comments and suggestions that students leave, but I learned that the school has to jump through a lot of hoops in order to get those suggestions into reality. Also, I learned that Parkhurst is trying to create a better world by supporting smaller farms that are adopting more animal-friendly ways of housing the “food.” I think it’s really important that schools like UNE partner with companies that partner with farms that adopt sustainable/humane methods because it paves the way for other schools and shows students that sustainability is possible.
